Rectangle ice cream. a joke of sorts. Frozen strawberries, greek yogurt, protein powder and stevia in blender. Makes ice cream that tastes better than a lot of store bought. Much better for you, too.

Going to give this a try. Do you freeze the yogurt too? Or do you freeze it all after it’s blended?

Couple of things. I make a single serving of this at a time. This will not work with too much frozen stuff. The order is very important and I have a strong blender (vitamix/ninja). I would not recommend freezing the yogurt, you need some liquid for the blades to move. Put stevia (sweetener), protein powder and any other dry stuff at the bottom of the blender. I like a tiny pinch of salt. I've added a tsp of psyllium, xanthan gum, cocoa, cinnamon, whatever. The xanthan gum is interesting and you only need a tiny bit, it makes it more ice creamy, hard to describe. The protein powder I'm using now has it in there, so I don't bother (solimo from amazon). Ten medium size frozen strawberries or 3/4 cup frozen blueberries. You need space in between. Mango is also amazing, but they don't seem to have it frozen at my store lately. Peach is good, too. Oh heck, pretty much any sweet fruit. Cherries would have more calories though. 1/4 cup nonfat greek yogurt. If you don't have strong blender, I'll give you an alternative at the bottom. If you don't like yogurt, use any kind of milk or alternative milk/yogurt/cottage cheese. Turn blender on low, then high and push the ingredients down with a tamper, if the blender is straining, add some liquid, milk or water or whey (which I get making my greek yogurt). Keep pushing that frozen fruit into the middle until it's smooth but don't go all the way to milkshake, that's too much. If you do, you'll need to follow the freezer instructions below. This whole thing only takes about 1-2 minutes. If you're a visual person, all the blender companies have great videos on how to do this stuff. Vitamix, Blendtec and surprisingly QVC. Google blender ice cream. It's really helpful to watch videos because it teaches you how to best use the tools. There is an art of sorts to not blowing up a blender. For the less powerful blenders, thaw the fruit for 10-15 minutes and then blend, but use a mix of yogurt/milk/water (anything to add liquid). You're making more of a smoothie, and then put it in a shallow pan lined with plastic and stick it in the freezer until it's more solid and scoop. I guess it will store, never tried it, because I make it when I'm hungry. As with most things frozen, if you don't like ice crystals, you're going to need to stir it a few times as it freezes to prevent that. The key is that it's mostly frozen fruit. The protein powder is most of the calories and you don't have to add it. I would definitely put this up against my friend's sorbets and fruit flavored gelatos.
