A crazy experiment that worked, this is 1/2 quart of eggnog I made into Greek yogurt last night. I did cut it with regular milk because it was 170 calories per 1/2 cup as liquid, and there's about 1.5 cups of it as semi-dense yogurt. It reminds me a lot of the filling in a good Boston creme pie. Definitely a "treat" as opposed to every day thing. You are seeing paper, it's sitting on a paper towel in the strainer. Wasn't sure this would work, I think if I strained it for 24 hours it would be a great alternative to cheesecake or frozen might make a good base for a custard style ice cream. I had a bite to taste, going to save it for another day.

I made ice cream out of eggnog. It turned out great, but as you said very calorie dense. I eat yogurt every day. I’m going to try your idea.

Kenna, I'm thinking about putting a spoonful on top of warm apples and cinnamon tonight as a dessert. All of the flavor, fewer calories and more fiber than plain.

That sounds really great. No way will it not be delicious with that flavor combo.
