So here's the results of my test smoke. Final product off the smoker is amazing, couldn't be happier with how it turned out. My Weber sure is ugly right now, though, but I haven't lost a step, in fact this was probably the easiest smoke I've ever done. It's going to be a great summer!

Wow! you had to post those ribs today on my second day fast of 44:4. Our friendship is in doubt now. I just need a invite to come over and then all is well.

East Texas Style Barbecue, according to me; rub minimally with kosher salt, cracked black pepper, and garlic powder then slow smoke over Pecan wood. Same basic formula regardless of meat.

Where do you live Phil. I'm coming for dinner. The heck with the diet and carbs. My husband makes good ribs but these look exceptional, and he hasn't made them in a long, long time.

Ryan, that's awesome, which barbecue joint on your tour would you rank as your favorite? Thanks, Soon, I try to be diverse and I've pretty much stopped pushing any kind of advice and only occasionally take troll bait, so hopefully everyone loves me! lol

Do you have a smoker or smoke on a grill? If smoker, any trusted model you can recommend? We were thinking of buying one. We smoke fish on a grill, but don't think it will work with meat.
