Kat, dressed up meatless spaghetti. Made this the other night and had leftovers for lunch. Canton style noodles (love these since they come in the percect sized singke serve bundles). Sautéed purple onion, garlic, kale, roasted butternut also Sautéed to get edges a little crispy; some of those delicious canned tomatoes, and Ragu spaghetti sauce. Specifically went and bought shredded parmesan cheese for the leftovers! Wanted to use the other half of the roasted butternut squash up and had half a jar of the Ragu spaghetti in fridge so this is what I came up with.
