Sharing this favorite recipe for Isabel and friends.... This is the tweaked and improved version which I call the Ultimate Cheesecake Pancakes... And in our home we nickname them "Flax Stacks"- now, ain't that just cute?!


Evie’s Cheesecake Pancakes

An excellent low-carb substitute for pancakes.

Ingredients:

4 oz cream cheese, softened (I microwave it for 40 sec)
2 large eggs
1 pat butter
½ tspn cinnamon
½ tspn vanilla
1 tbsp flax meal (I use Bob’s Red Mill)
1 packet Splenda (or more, to taste)
¼ tspn baking soda
½ tspn baking powder

Directions:

Mix all ingredients in mixing bowl until smooth and well-blended.

Serves one person – makes 3 to 4 large-sized pancakes. I double the recipe for Jim and me… He LOVES these!!

Hey Evie - I just looked up the above ingredients here on FS (so not sure if the carb counts are totally accurate)... but I came up w/ 11 Total Carbs, and 9 Net Carbs for one serving. Your cookbook has this at something like 3 net carbs. ???

Thanks Evie. Can't imagine where the carbs come from as there is only 1 tablespoon of flaxmeal. Anyway, I appreciate you reposting this for me in an easeir to figure out format. I will try them on the week-end.

4 oz cream cheese, softened - 4 carbs. 2 large eggs – 2 carbs. 1 pat butter – 0 carbs. ½ tspn cinnamon – 1 Carb. ½ tspn vanilla – 0.5 Carb. 1 tbsp flax meal – 2 Carbs ( 2g’s Fiber – Net 0 Carbs). 1 packet Splenda - 1 Carb. ¼ tspn baking soda – 0 Carb. ½ tspn baking powder – 1 Carb.

I just tried this but my disclaimer is that I didn't follow the recipe exactly. I wanted to reduce the fat so I used ff cream cheese, egg whites only, 1T almond milk instead of butter, & 1 tsp vanilla instead of both cinnamon & vanilla (not a fan of cinnamon really). The batter seemed really runny so I added a scoop of vanilla whey protein to thicken it up & boost the protein content. It made 3 large pancakes which tasted pretty decent with my sugar free syrup, but the texture was a little too eggy for my taste. I think I would add more flaxmeal or almond flour & maybe less cream cheese to get a more bready texture. The way I prepared them, it came out to <5g fat, 10g nc & 45g protein. Someone changed the entry for Hungry Jack SF syrup to 1g nc, but I don't think that's accurate. Add another 8g nc for the syrup.

@kstubblefield....My container of Hungry Jack Sugar Free Breakfast Syrup shows 8g. total carbs but with 8g. sugar alcohols (sorbitol, acesulfame potassium, and sucralose), so total carbs are 8 and net carbs would be 0 (but 1 in food diaries to account for the sweeteners).

Paula, I don't know why your numbers came up like that - but it is not accurate. Perhaps it was the brand names you entered. I re-entered the recipe in my cookbook the way I created the recipe many months ago - to avoid any confusion. The net carb count is like 4.5 or something close to that. If people use imitation vanilla it's sure to spike their carb count up. I use 100% natural vanilla extract - bought in bulk from Mexico (cheaper there). The original Cheesecake Pancakes recipe posted by another FS member was okay but not the best as they were actually more like crepes. I did tweak the recipe to make it better - and with the added ingredients there is only one unit of carbohydrate added. So, it's still a low-carb wonder in my book! The proof is in my weight loss. Hope that helps! = )
