In low carb diets, you eat a lot or protein. Protein pushes the water out of our cells. When you add carbs back in, the cells take in the water again. It's the sucky thing about low carb. You have to get your body used to the carbs again, by adding them in slowly. Focus on low glycemic carbs like fruits and vegetables at first. You may see some water weight gain. Keep track of your calories to see how much you are eating. The gain isn't fat. As your body gets used to more carbs, it should level off. It will take some time. It happens to everyone on low carb diets. If you go to the Atkins site, there might be some info on how to add carbs back in slowly or just google it.
