I use a non-stick pan; warm the pan on high heat for about a minute. Add spray and cook. Pre-whisk two eggs and add it to the pan on the lowest heat, with the lid on. When the “pancake” starts pulling away from the side, I lift and flip it onto the other side for a brief moment before removing. I add the insides after the omelette is on the plate so that it doesn’t break ☺️
