Down a bit today. All of the pounds and half pounds really eventually add up. I'm down 16 and I'm hoping to be down 20 by the end of next week. We have an annual meeting in May and I'd love to be down 30 by then even though most of those people have never seen me before. I'd rather their first impression of me be at least a little better. I have no idea how many calories I get a day but my carbs are usually below 20. I eat a lot of deviled eggs, sausage (watch the carb counts in those as some are higher than others), bacon and of course lots of low carb salads which I am pretty tired of. We have a salad bar at work so I just use romaine, chicken, broccoli, cheese, bacon, a bit of sunflower seeds, eggs and ranch. I wish they had bleu cheese. So, as you see, it is very low net carbs and very high in fat. Not sure if the protein is where it should be but I think it's usually somewhere in the high twenty's percentage wise. And of course I always have string cheese on hand. I'm dying for something sweet. When I used to do this diet I'd make low carb cheesecake with no crust. It was very good but the carbs did add up with all of the sweetener I'd have to put in and of course the cream cheese which does have carbs. Has anyone ever cooked with stevia? I used to use Sweet & Low but I'd have to use quite a bit because it lost a lot of sweetness when cooked. Anyone have any suggestions for a sweetener?
