Lilly flowers, Of course dear! Here's the cheesecake recipe. For base: 30 g butter 60 g almond flour 40 g unsweetened desiccated coconut For mousse: 200 g avocado 10 g fresh mint 80 g erythritol 150 g mascarpone 110 g single cream 8 g gelatine 20 ml lemon juice 1 teaspoon lemon zest 50 ml cold water 1. Melt the butter. Stir in unsweetened desiccated coconut and almond flour. Place in a cake tin and form a dense crust. 2. Put avocado, lemon juice, zest, mascarpone, mint and erythritol in a blender. Grind like a smoothie. 3. Put gelatin in cold water. When the gelatin increases in volume, heat it in the microwave until it is liquid (but do not boil it!). 4.Pour in liquid gelatin while quickly stirring the mousse. 5. Pour the avocado mousse over the crust into a mold. Refrigerate for 6 hours. Whole cheesecake weight: 730g Kcal 1940 Fat 187 g Protein 37 g Carbs 41 g
