I did. I was supposed to cook it this weekend to keep the house warm, but it was still partially frozen yesterday afternoon. It’ll be done in about an hour and turkey everything for a couple of days. Some will go in freezer and I’ll make some soup.

I know, I *love* turkey. And the smell in the house while it cooks. Turkey, garlic mashed cauliflower and keto gravy...... mmmmm okay, now I'm drooling. Oh and turkey stock for naked wonton soup.

That looks so delicious! And I like how you cook it in around an hour because when I was growing up, my Mom used to cook our turkey overnight and it was a little dry… And then when I moved out and started making my own turkey, I learned that it didn’t have to be cooked overnight! Anyways, it looks great! Enjoy it and stay warm and cozy! 😉

It took a little more than an hour, but that probe does most of the guesswork. I set it to reach 180 in the breast meat/165 in the thigh and the oven does all the magic. For 17 lbs, I think it cooked about 3-1/2 or 4 hours. I just went on with my evening. I did pull it apart last night and will bag up lots later today. Bones are ready for soup stock but I need an onion, not sure how that happened.
