I'm feeling discouraged I am being o careful, documenting every last thing I eat, drinking lots of water...etc. I just don't feel like I'm making any progress

Hmmmm, I'm seeing a loss of 4 pounds in just 8 days which is a fine start! Maybe I'm missing something. Your food diary looks very complete - great job! You might consider dropping the bars, as some people are especially sensitive to the sugar alcohols in them. Definitely add more veggies; you've got some but need to keep trying to add so you can get into the 12-15 net carbs coming from foundation veggies. You've also got room for more calories - yes, more. Your aim should be for 1500-1800 per day. You can always adjust that, up or down, as needed later, but you want to keep fueling your metabolism. You're still early in this journey (but off to a great start), so give your body time to adjust to this new, higher quality fuel mixture! Good luck!
