Diario de veggies yuk, 17 sep. 08

ATTACK OF THE VEGGIES...

the garden is winding down, the last couple of nights being in the 50's do not help it...we have about 30 gallons of tomatoes cut up and in the freezer for processing this winter...and we put up over 90 quarts of sause and salsa for this coming winter...we will distribute it to about 5 families that we know will eat it...

last thursday i walked up about 100 steps on the way to bookclub...i skipped the elevator...on friday and saturday the ankle was very tender...but not bad

on saturday evening i went to the shakespear theater and walked about a mile...

sunday i was just putting around the house and babying the ankle...hubby was gone for about 7 hours on fire runs - we had the tail end of himocane ike here...winds at about 80 mph...we lost power about 6 times but it came on and we had no phones until monday evening around 5ish...

my office was powerless from sunday about 2pm until tuesday am around 1130ish...

i have purchased a squash to make bt's mexican speghetti so i will post that when i have done it...lol...you guys are killing me...

michael (nephew) is awaiting admitance into a rehab clinic...because he is a month and half from being 18...we are having problems getting him in...he is still willing and helping with this process...thanks for everyones prayers, wishes and thoughts...

hope all is fine and everyone is doing well...

You have been running around! Sorry that your nephew is still waiting on getting into Rehab....is insurance pushing it off? or is he on a waiting list for the clinic itself? You are addicted to spaghetti squash girl! Who would have thought?! heheh Have a great day! =)

because of his age...the youth places cannot take him and the adult places want to wait until he is 18...my sister does not have insurance so we are paying out of pocket...i know who would have thought it...but i might actually like squash...go figure

that stinks that they can't get him in, and the poor thing has to be in limbo. You would think that they would make an exception! Did you just realize you said LIKE and SQUASH in the same sentence???!! =P =D

oh no,..that was a serious mistake...i cannot say those two words together...lol...it is very frustrating about not getting him in...we had one place that said yes and his doc sent a negative endorsement to them..."because he does not like their doctor"...that made me so mad...we have fired his doctor...the dude let his personality issues interfer with michaels treatments...uuuuuuuugggggghhhhhhhh

no he isnt...so we really had to start over...but we will get him in and the help that he needs...he is a very special kid

Gosh, I tell ya! Doctor shopping shouldn't be, but really is a MUST these days. I have learned the hard way, repeatedly and you must seek a 2nd opinion, for nearly everything. I'm sorry you are struggling with getting him good help, but good for you for sticking to it! YAYAYA!! LOL LOVE that I've YOU wanting to try out the Mexican Spaghetti!! Hehee hee hee!! Guess what I had for breakfast???? =D YUP, MEXICAN SPAGHETTI! I think it'd be great w/spaghetti squash, too. OHHHh.... please do share about how you froze the tomatoes,... did you blanch and peel them first??? I want to do that with mine,... and make salsa and maybe some sauces for winter. bt...please tell me in detail how to make the squash speghetti..it is a yellow gourd looking thing...lol...also with the tomatoes...if i am keeping them for tomato sause...i cut them into 1/4inch pieces...and just freeze them skin and all...because when i make my sause the skin cooks down and leaves a great flavor and i strain out any pieces that are left...usually on 1 or 2 in a 24 quart pot...if i am cutting them for salsa...i cut them in 1/2 inch pieces and drain most of the juice before i put them in the freezer bags...in either case i do not cook them now...you keep more flavor and nutrients by freezing directly

MMmmm... cool, thanks on the tomato tips! Okay, if it's a spaghetti squash, (sort of oblong cream colored thing) you'll cut it in half (length wise) and scrap out the seeds. I don't do anything else to it (some butter and salt it) and then you place if flat side down and bake it, until its cooked through, about 30 mins or more on 350. Others may have other baking instructions too. Basically, when it's "done", it's "forkable" and then let it cool a bit and then 'scrape out' with a fork, the noodle like insides from the shell and voila! =D It looks like spaghetti noodles on a plate and top it with sauce. *slurp* =D

no...i think it is a butternut squash...i know the speghetti squash...and this one i bought to make your squash noodles with...the ones you posted when you first made this dish...lol

That's interesting about the tomatoes, I read that the Italians do something similar with summer tomatoes (freeze the sauce in old wine bottles or something) to use in the winter and, when those run out, they go to the canned tomatoes avoiding non-summer fresh tomatoes as much as possible until the following summer comes around.

Oh... okay, well I used a yellow zucchini... a LARGE one from my garden. ;) lol I am not sure on the butter nut squash.... I think it'll be yummy too, but a bit different. Hmmmm... you could try peeling it into a plate and the boil it until "noodle like" consistancy. I haven't tried it with that one, but I'm sure it'll be tasty!! I'm sure if you cubed it and baked it and then served the sauce over it, that it'll be yummy, too. Let us know!!

LOL =D Well, if he's like my Clint, he'll LOVE it!! lol I wished my butternut squash survived in the garden, but it didn't make it. =S Tons of spaghetti squash, though! :)

I think you'll like it! You could even "mash" the butternut if you bake and cube it and then put sauce over it! =D I think it'll be GREAT, no worries!

Wow. You have lots of work to do with your veggies! Kudos to you for getting some walking in even though your ankle is hurting. Hoping for the best for your nephew.

take care of that ankle, maybe too many steps that day?! Great on using up all those tomatoes and sharing the wealth. Glad to hear things are moving along with your nephew too. about that butternut squash. There is a terriffic recipe on this site for ImLuuvd's Roasted Butternut Squash with Rosemary and Balsamic. I don't use the rosemary because my hubby hates rosemary, so I don't use the rosemary but when i cook this it turns a nice brown color and its as if it "glazed" the butternut squash and it has a unique sweet taste. Reminds slightly of a sweet potato bake... you have to try it, its a favorite in my house now
