Muffin in a minute! Lots of ways to make it! I make one several times a week. Just look up MIM or muffin in a minute on google. I started using cinnamon and now onto allspice.
I also make a mock danish that is just delish! I have that almost every night as a dessert! I'll give you the recipe because I changed it to suit me.
2 oz cream cheese softened, 1 egg, 1 t splenda, now you can use some sort of extract but I went further and add 1 T sugar free syrup taroni (sp) and 1 T of Hershey's unsweetened cocoa. Mix it up and microwave for 2 min. For a frosting, I add 2 oz cream cheese, 1 t splenda, 1/2 sq of unsweetened Baker's chocolate and microwave. I microwave the chocolate in a bowl with a lil water to help it soften and then I add the cream cheese and splenda.

Is all the stuff you're adding induction friendly? I got my recipe for it off the Atkins website because I wanted to make sure I went with one that was approved by Atkins for induction
