AS THE VEGGIES ATTACK...

they tried to beat me last night...they put up such a good fight, i thought my brain would explode...i drove for about 40 minutes before i figured out how to get a veggie in that i would not normally eat...

see...went to h20 aerobics last night and after the class i talked with the instructor about my ankle and the limitations that i have with it...she totally understands...she has a plate in her foot and one in her ankle...i was encouraged to hear that...she also told me that the deeper the water i am in the less of the impact on the ankle...so i will start out deeper and work my way to the shallow end...

there is a class thursday night after the normal class that is called deep tread...i am going to take it...it is done outside in the deep pool with a small float devise around the stomach area...this is the only class last so it is worth trying it, so that i will know the next time it is offered...

so back to the veggie delima...i had ONIONS...i normally pick them off or order without...so i left them on...and i swallowed them...i actually had to taste them...they were strong...actually - - -:0 they were doable...might buy some for general cooking with...lol

i will post the list of veggies that i have already tried and hopefully you all can come up with some more for me...lol...love ya...

Good for you!! I literally gagged on them for years!! It took me until about 30 before I could actually enjoy them. I even love the red ones, ... raw! lol Still am working on the white and yellow raw, but I do cook with them for the flavors in most everything else. :) Enjoy the water class... way to go on continuing forward! I will take a list and my pain log to my appointment. I am so overwhelmed with dealing with all of this. Thank you so much for your support. *hugs*

You are brave for trying onions. Even for people who like veggies, onions can turn some of them away. Great Job. I have to ask.........are you finding any veggies that you are kinda liking now?

I'm not a big fan of raw onions, but I LOVE them cooked. They just got well with soo many other good veggies, and get all sweet when cooked long enough. Anyway, great job on opening up your veggie tastes :)

thanks for the support...the onions were definately a new taste...a few of the new ones i have tried and liked...speghetti squash, red, yellow, white and purple peppers, made a zucchini crust for pizza and that was not bad...but raw i do not like it...parsnips are ok...i will do a complete list tomorrow..lol

i hate onions too! but my friend made some BBQ veggies skewers and she put purple ones on it. they were actually sweet, maybe because they were done on the BBQ? mmm zuchinni crust - good idea!

zuchinni crust was one of the first things i made with veggies...the hubby and i could get italian style foods every night...so after the first month or so we really missed the pizza...so we made this and it really did not interfer with the taste of the sause or toppings...i think the recipe is posted here...

Don't make any promises about what you'll do tomorrow with food discoveries. It happens at its own pace. You are doing so incredibly well! ONIONS! VICTORY! DO_ABLE! This to me is music to my ears. Because onions are such wonderful aromatic vegetables. One of my favorite ways to enjoy onions, besides just putting them minced in all kinds of things, is to stuff them. It is a very French and a very delectable way to enjoy them. Congratulations, My dear, you are entering a whole new world.

what do you stuff them with...i will eat almost anything that is not a veggie...lol...seriously...i am willing to try it...

Hi! Try the Oriental Green Bean recipe on this site. It's very good. Last night we tried swiss chard for the first time and it was so bitter! Yipes. I dont think we'll try that one again. Both my husband & I are Asian and we love Chinese veggies. You can stir fry most of them and when you do, they decrease to 1/5 of the size. So you end up eating all these veggies that fill you up! Try to see if there's a Chinese supermarket in your area. The food is inexpensive there also (much cheaper than regular supermarkets). Some examples: bok choy, baby bok choy, chinese broccoli, etc. Good luck w/the veggies! You're definitely on your way to a healthier you.

we had a chinese market for awhile and then they left the area...i will search out another one...i never paid attention to the veggies before this challenge...but i will now...thanks for reminding me...

i love swiss chard but the only stuff i've seen in grocery stores was way too big! on the east coast we only eat it if it's no bigger than the size of your hand. if you see baby swiss chard it might be less bitter, no more bitter than spinach hopefully. i have long beans at home i will have to check out that recipe - thanks julieC! i think i found the zucchini recipe : http://www.fatsecret.com/recipes/parmesan-crusted-zucchini/Default.aspx the parmesan crusted, i'll have to try it out. that's too bad there's no chinese grocer near you. i am lucky to work beside chinatown. not only is the produce cheaper it's way fresher too as well as more variety. i actually like the 'chinese broccoli' (gail lan) if it's in a ginger sauce :) a list of veggies you've tried so far would be great!

the zucchini crust is 2 zucc's shredded, a couple of eggs, parm cheese and ricotta cheese i think...sqeeze all the water out of the zucc and mix the rest together...bake for about 15 min until set...put on the normal pizza toppings and rebake for about 20 minutes or until cheese is melted...cuts like a regular crust...but you do need a fork to eat it...i could not tell it was a zucc...that is saying something...lol
