I don't really use a rub; salt, pepper, maybe some garlic powder, seasoned salt of some kind, Tony Chachere's. I used to use a lot of Smoke House Maple from McCormick's but I've really dialed back on using that and not very often. Smoked over Oak.

I will salt the meat, then rub with spices. I mix together: garlic powder, ground cumin seed, ground rosemary, oregano, Ancho chile powder. For pork, I generally also sprinkle with hot pepper flakes. Then I oven roast at low temps, 275 to 325, until I get thermometer readings over 200. If I use sauce, it will be a light coating applied about 1/2 hour before roasting is done.

My local Kroger has a coffee, garlic and chile rub that's good on grilled hamburgers; found a similar rub at Lowe's, of all places.

Low Carb Pork Tenderloin Smoked with Dry Rub [Keto, Gluten Free, Sugar Free]

Ingredients
1 pound pork tenderloin
1/4 cup yellow mustard
1 tablespoon salt
1 tablespoon pepper
1 tablespoon garlic powder
1 tablespoon chili powder
1 teaspoon oregano dried
1 teaspoon parsley dried
Hickory wood chips/pellets or wood of your choice
Directions
Remove fat and tough silverskin (fascia) from pork tenderloin.
Coat pork tenderloin in yellow mustard.
Combine salt, pepper, garlic powder, chili powder, oregano, and parsley in a small bowl or shaker. Evenly distribute the dry rub over the tenderloin.
Wrap the tenderloin in plastic wrap and place in refrigerator for 2-24 hours, depending on your timeframe.
Remove tenderloin and allow to reach room temperature by resting on counter for 30 minutes.
Start smoker with wood of your choice and set to a temperature of 200 degrees Fahrenheit.
Heat a large frying pan or skillet over high heat and sear pork tenderloin on all sides.
Place pork tenderloin on smoker. Smoke until internal temperature reaches 145 degrees Fahrenheit for medium rare and 160 degrees Fahrenheit for medium. This will take approximately 2-2.5 hours, but time may vary depending on your smoker set-up. Base cook time off of the internal temperature.
Remove pork tenderloin from heat and let rest 10-15 minutes before slicing.
Notes
1 serving = 1/4 of the pork tenderloin.

I do not have a smoker but make do by using the weber gas grill set at 200 and let it slow cook for 8 + hours. I like the dry rub method but do baste sometimes with a wet sauce. Yum! I am not keto but support all of you who are and this movement!

Anyone here have any experience with lamb versus mutton? Goat is probably more readily available here, but it's been years since I had any. On the bright side, Bella, chicken wings are fairly inexpensive.
