Cook them, then cut them in small blocks. Use them in your salads. 

You can make a nice salad with cooked beets. Either beets, crumbled feta, red onion sliced thinly and drizzle with balsamic reduction or beets with roasted butternut and feta 

I love beets with balsamic vinegar. They tend to be a bit sweet for me and I have a sweet tooth! Love them with balsamic in a salad, or with white wine vinegar as a side dish.
