Diario de Lotus, 19 may. 08

Well YEA! I am back to where I was, thank goodness, that 10 days felt like a life sentence.
With the warmer weather kicking in I need to really get my butt in gear as far as exercise, I did less than normal this past week for sure.
I slacked so bad on exercise last week.
I'm feeling a bit more motivated now that mny weight is back down, strangely. You would think I would have felt MORE motivated to work out after a weight gain! It's been very humid as well, and humdity and me do not get along. It will not stop me though, it's just not as fun.
Our air conditioners suck too. Well, actually it's more that our house is not well insulated so it doesn't stay cool.:X
Summer is here in Texas, and I am feeling the pressure to lose that last little bit and get more toned so I can fit into my shorts and swimsuit abnd feel confident at the lake. We are already getting invited to barbeques..yikes!
Time to break out the low fat potato salad!
I love my internet. I can find a diet version of any food I want. I need a lower calorie bbq sauce recipe, I love bbq.
I made low fat cole slaw last night, I can't wait to try it.
Cole slaw..I used to HATE that stuff when I was a kid, but I love it now! I had a dream about it last night..lol I'm so so weird. I definitely think about food too much, LOL!

Ice cream is so irresistable in the warm weather! A good tip that helps me with portion control is to buy those cake cones, the ones with 20-25 calories. it makes the ice cream last longer because you can lick it intead of just shoveling it down, lol.
If ya'll (low fat friends, not low carb pals) haven't tried Dryer's Double Churned light or Dreyer's loaded(which is close to the same in calories and is SO GOOD) you have to. Cookies and Cream loaded is to die for.
It's better than sex, LOL!!!

Good job on gettin' back down to where you were so quickly! I'm sure you had a lot of water weight more than anything. :) Have you checked out the site for Blaines low carb cooking?? 10 days, it wasn't that long ago was it!? the dq and candy day? forgive me for mentioning it! good job getting back on track tho! how do you make low fat cole slaw... no MAYO?? NO THANKS! lol oh i love and miss mayo!

I do NOT forgive you..lol. It seemed like a lot longer than 10 days to me!!! I am feeling better now, the guilt is finally clearing a bit. The aftershock of going off the deep end lasts so much longer than the act of binging itself..I torture myself for a week at least! The cole slaw I made tasted like regular to me. I combined several recipes that i found and added my own twist! For the dressing, I used 2 tbs plain yogurt(ok I lied, I used vanilla..shh, I know it sounds gross but you can't tell! the recipes all said plain, but they also added sugar, which I did not) 2 tbs fat free blue cheese dressing, 2 tbs Miracle whip Free, @ wedges of Laughing Cow Light Swiss(my own secret ingredient!) 1 tsp hgoney dijon mustard, 5 chopped dill pickle slices, 1 head(9 cups chopped) cabbage, 1 cup grated carrot. I marinated the finely sheredded veggies in pickle juice amd lemon juice since I didn't have any plain vinegar(for about three hours), it worked awesome. Then I put the blended dressing on it, mixed thoroughly and refrigerated overnight. I measured the fiunal product and it made 5.5 cups. Per cup: 72 calories, 1.3 grams fat, 12.9 carbohydrate, 4.7 fiber, 2.8 sugar, 3.4 protien. I had 1/2 cup on a turkey pita with 2% pepperjack cheese and jalepenoes for lunch, SO GOOD!!!! I already am craving more slaw. There are many ways to make cole slaw, I am partial to a creamy dressing, and the laughing cow made it richer and very good.I like Miracle whip free, I use it all the time. You could use any ratio of the creamy dressing or substitute a different one. I bet fat free ranch would be good too. That was my very first time making cole slaw, and it was so much better than I expected! Like regular, I promise!!

wow, blue cheese actually sounds delicious. It really does! I wonder if the lemon/pickle played well w/ it, because vinegar might not have. ??? for my reg recipe i use cider vinegar, sugar and mayo. This does sound interesting! I BET YOU ARE A GREAT COOK! Not afraid to try new things and make it to your liking a cal count! lol thanks for the recipe!

Can you guys beleive I returned to the scene of the crime already? yes I went to the dread DQ. I just got a baby ice cream in a cup though! I even scooped some of it into my daughter's cup just to be safe, they give you a little much sometimes and I used to work there as a mananger so I can tell. I wanted something less plain though, so I snuck in a Oreo 100 cal pack and a packet of chocoalte sugar free pudding mix and made my own little sundae! I love their soft serve..but gotta fight those gooey toppings!

like just the pudding mix? OOOOH! if you mix w/ water WOULD IT BE LIKE FUDGE???????????? OH I LOVE HOT FUDGE... i can't go to dq! i ask for a bucket of hot fudge w/ only one scoop of icecream!!!! LMAO! oi, i have to try the pudding thing! yummo?! or milk huh?

I wish it was like hot fudge..but it made it more creamy like a frosty , it was good! I am going to try it again tommorow with pistashio, with the ice cream I have in the freezer!

BTW one squirt of hot fudge is 150 calories and 50 calories fat and they put WAY more than they are supposed to!

i LOVE way more then I am supposed to!!! HOW can that be so fattening! ugh! how much pudding mix are you using? well if you're mixing it w/ the ice cream i can see the frosty... but if you make like the mix and little milk i can pour it over the ice cream as if fudge...hmmm... lol i feel so guilty, nope i am over it!

Dreaming about cole slaw? You may need to consider a break from the diet. ;-) I'm an ice cream lover too, and will definitely try those Dreyer recommendations. I really appreciate the way you are enjoying the road down to perfect health Lotus, err... Karla. ;-) Your chart is amazing!
